Caramelized pineapple rings in the center of each pancake and a drizzle of warm, homemade coconut syrup!

Ingredients

4 Tbsp (56 g) butter, divided and melted (or dairy-free alternative)
7 pineapple rings
2 Tbsp (25 g) brown sugar
½ cup (118 mL) canned coconut milk
1 ½ cup (187 g) flour
3 ½ tsp (13 g) baking powder
1 tsp (5 g) salt
1 Tbsp (13 g) sugar
1 ¼ cup (295 mL) milk (or dairy-free alternative)
