Ingredients
⅔ cup dry quinoa
1⅓ cup vegetable stock
Butter or oil for greasing pan
1 egg
Pepper
4 Tbsp chevre, softened to room temperature
1 Tbsp finely minced shallot
About 2 cups very thinly sliced yukon gold potato (about 2 medium potatoes sliced as thinly as possible on a mandoline)
½ Tbsp fresh thyme leaves
½ Tbsp chopped fresh rosemary
1 Tbsp olive oil
Sea salt
1 cup whole cherry tomatoes, pierced with a knife
Thyme sprigs for garnish (optional)
