Crunchy nut and fruit energy bars made with puffed kamut
Ingredients
1 cup pecans
1/2 cup almonds
1/4 cup peanut butter
5 dried unsweetened apricots, quartered
1 tablespoon flax or chia seeds
1 tablespoon canola oil
2 cups puffed kamut
1/2 cup dried currants or dried blueberries, preferably unsweetened
1/2 cup unsweetened shredded coconut
zest from 1 lemon
