Pumpkin-Applesauce Muffins
Pumpkin muffins made with fall spices, applesauce, and golden raisins, topped with pumpkin seed streusel.
STREUSEL TOPPING:
½ cup all purpose flour
¼ cup packed brown sugar
¼ teaspoon kosher salt (1/8 teaspoon salt)
3 tablespoons rolled oats
1 tablespoon salted pumpkin seeds
4 tablespoons unsalted cold butter, cut into small cubes
MUFFINS:
3⅓ cups (15 ounces) all-purpose flour
2 teaspoons baking soda
½ teaspoon baking powder
2 teaspoons cinnamon
½ teaspoon ground clove
½ teaspoon nutmeg
2 teaspoons kosher salt (or 1 teaspoon salt)
8 tablespoons unsalted butter, softened
2 cups sugar
4 large eggs
1 cup applesauce
1 cup canned pumpkin puree (not pie filling)
1 teaspoon vanilla extract
⅔ cup apple or orange juice (I used orange juice)
1½ cups golden raisins
