2 tablespoon avocado oil or extra virgin olive oil
1 red bell pepper, chopped
1 onion, peeled and chopped
2 garlic cloves, minced
1 cup cherry tomatoes, halved
1 large zucchini, chopped
1-2 chipotle chilis, minced
1 tablespoon chili powder
1/2 tablespoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 14-ounce can pumpkin
1 14-ounce can diced tomatoes
1 cup vegetable broth
1 14-ounce can black beans, drained
1 14-ounce can kidney beans, drained
8 ounces tempeh, crumbled
1/4 cup chopped cilantro, for garnish
