Quinoa egg fried ‘rice’ tastes very similar to the normal kind, but it’s softer, fluffier, and feels like proper comfort food! Plus it’s healthier too!
1 bsp oil
1 onion, diced
3 cloves garlic, minced
150g mushrooms, thinly sliced
100g frozen vegetables (I used a mixture of corn, peas, green beans and baby carrots)
100g canned sweetcorn kernels (drained)
3-4tbsp dark soy sauce (plus more to serve)
