Quinoa Spinach & Herb Salad

A fresh spring salad featuring quinoa, spinach, and bright herbs like parsley and mint. Tossed in a balsamic vinaigrette.
Ingredients
1 large sweet potato, diced
1 cup quinoa, cooked
2-3 large handfuls of spinach, roughly chopped
1 handful of Italian parsley, roughly chopped
2 Tbsp fresh mint, roughly chopped
2 handfuls cherry tomatoes, sliced in half
1 cup walnuts, roughly chopped
1 apple, cored and diced
Balsamic Vinaigrette:
¾ cup olive oil
¼ cup balsamic vinegar
1 large tsp Dijon mustard
1 Tbsp maple syrup
salt and pepper to taste
