3 tablespoons coconut oil
1 cup quinoa
1 13.5-oz can coconut milk (light or full-fat)
1/4 teaspoon cumin
2 tablespoons lemon juice
1/2 cup pomegranate seeds (plus extra for garnish if desired)
1/2 cup goat cheese (plus extra for garnish if desired)
1/2 cup chopped walnuts
