Ingredients
4 cups grape tomatoes, halved lengthwise
olive oil spray
salt and freshly cracked pepper
1 package Nature’s Earthly Choice Quinoa
1 can vegetable broth
1 cup water
3 cloves garlic, minced
1 cup parsley, chopped
½ cup mint, chopped
¼ cup extra virgin olive oil
2 tbsp. capers
