Red Cabbage and Chestnut Stuffed Vegan Phyllo Cups are the perfect holiday appetizer. So much flavor and texture in one bite, it’s hard to describe.
1 package of phyllo dough
¼ cup of melted vegan butter or plant milk
1,5 cups of grated red cabbage
½ cup of grated apple
½ cup of grated onion
1 clove of garlic, minced
1 tbsp vegan butter (optional)
½ tsp nutmeg
1 lime, juice
salt, pepper
1,5 cups of cooked chestnuts
⅓ cup of plant milk
1 tbsp tahini
1 tbsp balsamic vinegar
1 tsp chopped fresh sage
¼ tsp red pepper flakes (optional)
¼ cup of pomegranate seeds
¼ cup of chopped, toasted walnuts
¼ cup of chopped, fresh mint leaves
