Ingredients
1 Small cauliflower, broken into florets
1 Red pepper
2 Tbsp Olive oil (divided)
1/2 C Buckwheat
1/4 C Roughly chopped walnuts
1/3 C Roughly chopped parsley
1/2 Shallot OR 1/4 Red onion, finely chopped
2 Tbsp Lemon juice
Salt & pepper
