Ingredients
6 cups cherry tomatoes
1 cup onion (medium dice)
4 cloves garlic
¼ cup olive oil
2 tbsp balsamic vinegar
1 tsp oregano
1 tsp basil
1 tsp parsley
1 tsp kosher salt
1 tsp black pepper
2-3 cups vegetable broth
½ cup heavy cream or half and half (optional – omit to make recipe vegan)
