Ingredients
6 slices of crusty whole grain bread
4 teaspoons olive oil, divided
1 small zucchini, sliced into half-rounds (about 1 cup)
1 cup whole grape tomatoes
1 clove garlic, peeled and finely chopped
Salt and pepper
Zest from 1 lemon
2 ounces goat cheese, at room temp
2 ounces hummus
1 to 2 teaspoon fresh thyme leaves
