Can you believe it’s already November? Although winter doesn’t officially start until December, in my head, November is winter. And winter makes me want comfort food. Pumpkin Pot Pie from Earthy Feast // There is kale in this pot pie! Not to mention roasted pumpkin, kidney beans, and other delicious things. This would be a great meatless main dish for Thanksgiving.
Cauliflower Curry from Cubit’s Organic Living // I buy seeds from Cubit’s and this recipe is a sad reminder that I didn’t plant my cauliflower this fall. Sigh. But I will buy a cauliflower from the farmers market and drown my sorrows in delicious curry. I love that there are sweet potatoes and chickpeas in here too!
