I’ve never been much of a breakfast eater, but since they say it’s the most important meal of the day, I always eat it. In the summer, it’s easy–I have smoothies or cold overnight oats. But now that it’s fall, smoothies and cold oats are a little less appealing. Here are some filling, delicious fall breakfasts from Potluck members:

Wake and Bake Vegan Breakfast Cookies from Because I Like Chocolate // Cookies for breakfast! Shouldn’t we all start our days off with a cookie? Don’t you think people would be a little bit kinder to each other if they had cookies first thing in the morning? These healthy vegan cookies are full of healthy things like almond butter, flax, and pumpkin seeds. And of course, chocolate chips too!
Sweet Potato French Toast from Connoisseurus Veg // If I had to choose my most favorite decadent breakfast item, it would definitely be French toast. And I love this sweet potato version! It’s vegan, so it’s made without the egg or butter.
