Saturday Six | The Most Important Meal of the Day!

November 9, 2013 by kiersten Leave a Comment

I’ve never been much of a breakfast eater, but since they say it’s the most important meal of the day, I always eat it. In the summer, it’s easy–I have smoothies or cold overnight oats. But now that it’s fall, smoothies and cold oats are a little less appealing. Here are some filling, delicious fall breakfasts from Potluck members:

Sweet Potato Pancakes Sweet Potato Chocolate Chip Pancakes from Running to the Kitchen // Pancakes are okay, unless they have chocolate chips in them, in which case they are welcome on my breakfast table any day. I love that these are made with sweet potatoes too–perfect for fall!

Pumpkin Spice Nut & Seed Bars Pumpkin Spiced Nut & Seed Bars from Nutrition Stripped // It took me a long time to start making my own bars at home, but believe me, it’s so worth it. Instead of granola, these bars are made with seeds and nuts, making them full of protein and healthy fats. They’re just what you need when you need a breakfast you can grab and take with you.

Banana Blender Muffins Banana Blender Muffins from Lorimer Street Kitchen // As if healthy banana muffins wasn’t enough of a selling point, these banana muffins are super easy too. You don’t need two bowls, you don’t need a whisk or a hand mixer, you just need a blender!

Wake & Bake Breakfast Cookies Wake and Bake Vegan Breakfast Cookies from Because I Like Chocolate // Cookies for breakfast! Shouldn’t we all start our days off with a cookie? Don’t you think people would be a little bit kinder to each other if they had cookies first thing in the morning? These healthy vegan cookies are full of healthy things like almond butter, flax, and pumpkin seeds. And of course, chocolate chips too!

Sweet Potato French Toast Sweet Potato French Toast from Connoisseurus Veg // If I had to choose my most favorite decadent breakfast item, it would definitely be French toast. And I love this sweet potato version! It’s vegan, so it’s made without the egg or butter.

Pumpkin Granola Pumpkin Granola from Made to Create // Pumpkin-y, gluten-free granola! I have a feeling this wouldn’t last more than a day in my household. I guess that means I’d have to make a double batch?
