I love burritos because really, who doesn’t love burritos? Everyone loves burritos! But vegetarian burritos tend to be pretty bean-centric. And that’s why I’m excited about this recipe…
Quinoa Fajita Burritos from The Garden Grazer // In addition to black beans, these have fajita veggies, tomatoes, and quinoa. Yay for quinoa! And the best part is, they’re freezer-friendly so you can make a bunch of them, pop them in the freezer, and have them on hand for quick dinners.

I’ve not long discovered quinoa and I’m loving it, so will definitely be checking out those burritos – and anything with black beans is an automatic winner for me 🙂
Thanks for featuring my enchilada casserole!

Eeee!! Thanks for the recipe love 🙂 I’ve been totally crushing on all the potluck deliciousness – such an awesome idea. Keep up the amazing work!!
I think I’m going to try a recipe “smash-up”. I think the quinoa burritos recipe smashed into the enchilada recipe would be a total winner — amazing on their own, too tasty together! Nom, Nom! Plus I can’t decide which 1 I want to make first. 🙂
