Sichuan Green Bean-Noodle Stir Fry

An easy noodle stir fry with green beans, mushrooms, ginger, garlic and scallions.
Ingredients
1/2 lb thin spaghetti noodles
4 tablespoons soy sauce
2 tablespoons dry sherry
2 tsp. sugar
1 tsp. cornstarch
1/2 tsp. black pepper
1/2 tsp. red pepper flakes
1/2 tsp. dry mustard
4 tablespoons water
2 tablespoons vegetable oil
1 lb green beans, trimmed (you can halve them or leave them long)
2 tsp. sesame oil
4 ounces shitake mushrooms, stemmed and sliced
5 garlic cloves, peeled minced
2 tablespoons fresh ginger, minced
3 scallions, white and light green portions thinly sliced
