Ingredients
2 lbs beets trimmed (not peeled) cut into 1/2 inch cubes
3 garlic cloves finely minced, grated on a cheese grater or microplane
1 tsp fresh thyme or 1/2 tsp dry thyme
1/4 tsp salt
2 cups onions chopped
1 tbsp cashews
1/2 tbsp oil
3 cups chopped cauliflower
7 cups broth
cooking oil spray
salt & pepper to taste
