Slow Cooker Sweet Potato, Quinoa and Black Bean Chili

Prep time: 15 minutes
Cook time: 2 hours 30 minutes
Total time: 2 hours 45 minutes
Serves: 6-8 

This Slow Cooker Sweet Potato, Quinoa and Black Bean Chili takes only 15 minutes to prep and then right into the slow cooker! It results in a hearty, thick and delicious chili!

Ingredients

2½ cups (600ml) vegetable broth
½ cup (90g) uncooked quinoa
15 oz (425g) can black beans
14 oz (411g) can diced tomatoes
¼ cup (35.43g) chopped red bell pepper
¼ cup (35.43g) chopped green bell pepper
1 shredded carrot
½ cup (42.52g) chopped onion
4 cloves garlic, minced
½ small chili pepper
2 teaspoons chili powder
¼ teaspoon cayenne pepper
1 ½ teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon oregano
½ cup (90 grams) corn kernels
1 large sweet potato (about 340g), diced
