Ingredients
2 medium onions, finely chopped
3 garlic cloves, minced
1 tbsp olive oil, extra virgin
5 large celery stalks, diced
1 + 1/2 cups green lentils, dry & rinsed
15 oz can black beans, drained & rinsed
1 cup corn (frozen is OK)
15 oz can diced tomatoes
4 cups vegetable broth
1 tbsp chili powder (more to taste)
2 + 1/2 tsp smoked paprika
1 tsp cumin
1/2 tsp thyme or oregano, dried
1 + 1/2 tsp salt
1 tsp ground black pepper
1/2 lime or lemon, juice of
1/4 cup cilantro, chopped
