Spaghetti and Vegetarian Mushroom and Quinoa Meatballs

Spaghetti and meatballs gets a vegetarian makeover.
Ingredients
mushroom and quinoa “burger mix”, recipe here
3 tbs breadcrumbs
¼ cup olive oil
1 brown onion, finely diced
2 cloves of garlic, finely chopped
1 carrot, peeled and diced
1 tbs thyme leaves, roughly chopped
1 tbs rosemary leaves, roughly chopped
½ cup red wine
2 x 400g (14 ounce) tins of chopped tomatoes
400g (14 oz) spaghetti
salt and pepper to taste
grated parmesan to serve (optional)
