Spanakorizo is a traditional Greek dish made of rice and spinach with dill and lemon giving it a fresh and bold flavor.
Ingredients
4 tablespoons extra virgin olive oil
1 cup finely chopped red onion
1 garlic clove, minced
1 cup long-grain rice
8 cups (~ 1 pound/450 g) chopped fresh spinach, stems removed
½ cup water (more as needed)
½ cup chopped wild fennel fronds or dill
Sea salt and freshly ground black pepper
Juice of 2 lemons, strained
