Spicy Corn and Quinoa Bowl

A super easy yet incredibly tasty spicy corn quinoa bowl!
Ingredients
¼ medium sweet onion, diced
3 cloves garlic, diced
1 cup quinoa
2 ½ cups plus 2 tablespoons veggie broth, or 1 veggie broth cube plus a corner of a second one (I find the cubes to be very powerful!)
1 cup freshly cooked (or canned) black beans
1 cup thawed frozen (or fresh) organic corn
½ avocado, cut into small chunks
½ jalapeno, diced
Salt to taste
