Spicy Eggplant Quinoa Fried Rice

1 large eggplant, cut into thin wedges
dealer’s choice, any green vegetable cut into small pieces (zucchini, green beans, or broccoli etc.)
1 yellow onion, minced
2-3 teaspoons sriracha (depending on your spice preference)
3 tablespoon soy sauce
1 1/2 teaspoons white wine vinegar
1 1/2 teaspoons corn starch
1 1/2 teaspoons brown sugar
2 cloves garlic, minced
1 inch ginger, grated
2 teaspoons sesame oil
2 tablespoons neutral oil (like canola or grapeseed)
3 cups cooked quinoa, cooled to room temperature
1 teaspoon coarse sea salt
1/2 teaspoons red pepper flakes (optional)
1 egg lightly beaten (optional)
