Spicy Tacos with Pineapple Salsa

Homemade corn tortillas filled with spicy walnut meat, veggies, beans and a pineapple ginger salsa!
Ingredients
For the Shells:
1 cup corn flour
1/8 cup all purpose flour
1 cup water
salt
For the Walnut Meat:
3/4 cup walnuts
1/2 tsp hemp oil
1 tsp Bragg’s sauce
1 tbsp nutritional yeast
1/2 tsp chipotle pepper

For the Salsa:
1/2 cup tomatoes, diced
1/2 avocado, diced
1 tsp minced ginger
1 tsp minced garlic
1/2 tsp chipotle pepper
3 tbsp fresh pineapple, finely chopped
1 tsp pineapple juice

For the Assembly:
Red pepper, sliced
Onion, finely sliced
Black beans
Spinach, chopped
Spring onions, chopped
