Summer Vegetable Quinoa Salad with Dijon Shallot Vinaigrette
This Summer Vegetable Quinoa Salad with Dijon Shallot Vinaigrette is so fresh and easy for weekday lunches!
1 cup quinoa, dry (I used tricolor, but feel free to use whatever you have)
2 cups water
1 tablespoon extra virgin olive oil
1 small red onion, diced
1 medium zucchini, sliced and halved
1 medium yellow squash, sliced and halved
1 cup grape tomatoes, halved
1/2 cup fresh basil, chopped
for the dressing
1/4 cup extra virgin olive oil
3 tablespoons apple cider vinegar
1 heaped tablespoon whole grain Dijon mustard
2 tablespoons shallot, finely diced
1 teaspoon maple syrup (optional)
1 teaspoon dried oregano
1/2 teaspoon garlic powder
salt and pepper, as desired
