7 healthy superfoods (quinoa, blueberries, mango, edamame, Swiss chard, red bell pepper, cashews) + a creamy cashew dressing.
Ingredients
For the Salad:
3 cups chopped Swiss chard (or Kale)
1 cup cooked quinoa
1/2 cup red bell pepper, seeded and diced
1/2 cup shelled edamame
1/4 cup red cabbage, sliced
1/4 cup fresh mango, diced
1/4 cup fresh blueberries
1/4 cup coconut flakes
1/4 cup red onion, diced (optional)
For the Creamy Cashew Dressing:
2/3 cup cashew pieces, raw and unsalted
2/3 cup water (more if necessary)
1 tsp Dijon mustard
1/2 tsp honey
1/4 tsp salt
juice of 1/2 lemon
