Sweet Corn and Squash Fritters with Avocado Crema
An easy recipe for vegetarian fritters with corn, zucchini, yellow squash, scallions and fresh herbs. Served with an avocado-yogurt cream topping.
For the Fritters:
1 tablespoon flaxseed meal
3 tablespoons water
2 ears of corn, husks and silks removed
1/2 cup grated zucchini
1/2 cup grated yellow squash
1/2 jalapeño pepper, seeded and finely diced
5 green onions, white and light green parts thinly sliced
1/4 cup basil, chopped
3 tablespoons cilantro, chopped
1 tsp. salt
About 1/4 cup all-purpose flour
2-3 tablespoons extra-virgin olive oil
For the Avocado Crema:
1 avocado, pitted and peeled
1/2 cup plain Greek yogurt
2 tablespoons fresh basil leaves, plus more for garnish
1 tablespoon lime juice
1/4 tsp. salt
