I love making up a big batch of this hearty salad at the beginning of the week so that I have lunch or dinner made ahead of time on busy days. Tastes great hot or cold!
Ingredients
2/3 Cup Quinoa
1 Bay Leaf
1 Small Yellow Onion, Diced
1 Clove Garlic, Minced
1 Tablespoon Extra Virgin Olive Oil
1-2 Large Sweet Potatoes, Diced
2 Large Collard Greens Leaves, Stems removed and Sliced
Sea Salt and Fresh Ground Black Pepper to Taste
