Sweet Potatoes with Cannellinis & Spinach

Baked sweet potatoes are stuffed with a briny mix of creamy cannellinis, raisins, capers and herbs, and topped with wilted spinach for a one-pan vegan dinner.

Ingredients

sweet potatoes, unpeeled, scrubbed and pricked all over with a fork
cannellini beans, rinsed and drained
capers, drained
golden raisins
freshly squeezed lemon juice
herbes de Provence
kosher salt
freshly ground black pepper
crushed red pepper flakes or to taste
extra virgin olive oil
fresh baby spinach
