Ingredients
1 medium sweet potato, peeled and sliced into 1/4-inch rounds
1 Tbsp cornstarch
1 1/2 Tbsp extra virgin olive oil
1 Tbsp fresh thyme leaves
1/3 cup finely grated parmigiano reggiano
3/4 tsp sea salt
1/4 tsp freshly ground black pepper
