Tomato Basil “Caprese” Couscous

This Tomato Basil “Caprese” Couscous is packed with fresh flavors and can be thrown together for your next picnic in just 15 minutes!

Ingredients

1 cup whole wheat couscous, dry
1 cup water
3 Roma tomatoes, diced
1 cup chickpeas, drained and rinsed
1 medium avocado, diced
1/4 cup fresh basil leaves, chopped
for the dressing
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
squeeze of half a lemon
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
salt and pepper
