There is nothing quite as comforting as homemade baked beans. This vegetarian baked beans recipe is rich and smoky and oh so simple to prepare.
Ingredients
1 large onion
1 large shallot
2 garlic cloves, finely chopped
1 tsp cumin
1 tbs smoked sweet paprika
1 cup vegetable stock
2 cups tomato passata
2 x 400g (14oz) tins of cannellini beans, drained and rinsed
2 tbs maple syrup
2 tsp dijon mustard
3 bay leaves
salt and pepper
