Wake up to these super moist whole wheat banana nut muffins with coconut. Oh, and did I mention they’re vegan?!
Ingredients
1 TBS ground flax seed
3 TBS water
1 and 1/4 cups soy milk
2 tsp apple cider vinegar (or lemon juice)
2 cups whole wheat pastry flour (regular whole wheat flour works also)
1/2 cup coconut sugar (cane sugar works also)
1 and 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 TBS maple syrup
1 tsp pure vanilla extract
2 medium ripe bananas, mashed
1/2 cup unsweetened shredded coconut
2/3 cup walnuts, chopped
