Vegan cheesy broccoli quinoa is an easy, one pot dinner made with just a few healthy ingredients! A great simple week night meal that’ll leave you satisfied.

Ingredients

1 c dry quinoa
2 c vegetable stock
2 c chopped frozen broccoli
1/2 c nutritional yeast
2 tbsp mustard
1/2 tbsp turmeric
1 tbsp garlic powder
2 big handfuls spinach
1/2 c fire roasted tomatoes
