Ingredients
4 portobello mushrooms
1/4 red pepper, diced
3/4 sun dried tomatoes in oil, chopped
1/4 of large zucchini, diced
olive oil, salt & pepper
Cashew Basil Cheese – about 1/4 – 1/2 cup total
marinara or pizza sauce – about 1/4 – 1/2 cup total
fresh herbs of choice – parsley, oregano and/or basil (optional)
Marinade for mushrooms:
2 Tbsp olive oil
1 Tbsp balsamic vinegar
1 Tbsp minced garlic
couple pinches of salt
fresh cracked pepper
