Vegan Stuffed Poblanos with Cashew Queso
Poblanos are stuffed with brown rice and refried black beans, then drizzled with a rich and spicy homemade cashew queso!
Cashew Queso
½ cup cashews soaked in water at least 2 hours
¾ cup vegetable broth
1 tablespoon miso
1 tablespoon olive oil
¼ red onion, chopped
1 red bell pepper, seeded and chopped
2 garlic cloves, minced
1 jalapeno, seeded and minced
1 teaspoon cumin
½ teaspoon ancho chili powder (or other mild chili powder)
2 tablespoons nutritional yeast
¼ teaspoon salt

4 poblano chiles
1 14-ounce cans refried black beans
1 1/2 cups cooked brown rice
Chopped cilantro, for garnish
Chopped green onions, for garnish
Sliced fresh radishes
