Vegetarian Quinoa Tacos

Serves: 6 to 8 servings
Seasoned quinoa is the perfect meat substitute for this healthier version of the beef taco.
Ingredients
1 cup quinoa
2 cups vegetable broth
1 TBSP olive oil
1 cup finely chopped onion
1 red bell pepper, finely chopped
2 cloves minced garlic
3/4 tsp salt
1 tsp paprika
1 1/2 TBSP chili powder
2 tsp cumin
24 soft or hard taco shells
8 oz sharp cheddar cheese, shredded
Optional toppings such as shredded lettuce, tomatoes, avocado, jalapenos, sour cream, etc.
