vegetarian yakisoba with homemade seitan
Delicious stir fried noodles with the easiest homemade seitan. It takes a little while, but nothing tricky or precise. It would make a fantastic Friday night dinner with a glass of wine in hand.
1/2 a cup or 90g of vital wheat gluten
1/2 a cup of water
Oil
1/2 – 1 Tblsp of sliced garlic
1/2 – 1 Tblsp of grated ginger
1 head of napa cabbage / chinese leaf / any soft cabbage, shredded and rinsed
1 carrot, julienned
2 small or 1 large onion, sliced
1 red or yellow pepper, sliced
3 Tblsps of soy sauce
3 Tblsps of vegan Worcestershire sauce
2 Tblsp of ketchup
1-2 tsps of chili garlic sauce (depending on your heat tolerance levels)
1 tsp of brown sugar
1 tsp mirin
1 package of soba noodles (250g / 9oz)
1-2 tsps of toasted sesame oil
