This salad is super easy to make, tastes amazing and is also really healthy. You will feel awesome after having it – cucumbers are 95% made of water, which will rehydrate your body, but also contains a lot of antioxidants, cabbage is very high in fiber and vitamin C, quinoa is the perfect source of proteins, full of iron and magnesium, eggplants are also very rich in fibers. I literally felt in love with seaweeds when I was in Tokyo, which are so good for our body as they are full of vitamins C and A.
