Roasted veggies, pesto and parmesan cheese give an Italian feel to these quick and easy tostadas.
Ingredients
½ yellow pepper, diced
½ red pepper, diced
100g broccoli, cut into small florets
1tbsp oil
½ tsp dried oregano (or your favourite dried Italian-style herb)
Salt
Black pepper
2 mini flour tortillas
4tbsp pesto
40g vegetarian parmesan-style cheese, grated
1tbsp fresh parsley or basil, chopped, to serve (optional)
