For the Latkes:
1 medium russet potato (or other starchy kind), pealed
1 medium parsnip, pealed
2 tbsp potato starch
1 egg
½ tsp salt
2 tbsp green onions green tops, sliced
4 tbsp olive oil (or any other oil to fry)
For the Mayonnaise:
¾ cup (200 ml) olive oil
1 egg
2 tsp lemon juice
½ tsp salt
½ tsp turmeric
