Eggs are my secret to a quick, easy and delicious meal. Greek Greens frittata can be on the dinner table in less than thirty minutes!
Ingredients
1 tablespoon extra-virgin olive oil
1 bunch kale, thick stems removed, thinly sliced
2 garlic cloves, minced
¼ cup chopped kalamata olives
8 eggs, beaten
1 tablespoon chopped fresh oregano or 1 teaspoon dried
Salt and pepper
2 ounces goat or feta cheese, crumbled
Tomato Sauce:
1 tablespoon olive oil
2 garlic cloves, minced
¼-1/2 teaspoon crushed red pepper flakes
1½ cups canned pureed tomatoes
