An omelet with juicy tomato jewels studding the outside and warm, gooey buffalo mozzarella hiding inside.
Ingredients
2 eggs
1 roma tomato, sliced
2 C spinach leaves
1 small ball of fresh buffalo mozzarella (My favorite is BelGioiso Bocconcini Buffalo Mozzarella)
4 fresh basil leaves, torn
extra virgin olive oil
salt and pepper to taste
