Garlicky eggplant tossed with dried herbs, lemon juice and capers, and sprinkled with fresh basil. Eat as a side, on bruschetta for appetizers, or in your favorite pasta recipe as an entree.
Ingredients
1 large eggplant
2 T olive oil, separated
1 tsp salt
a generous crack of pepper
2 cloves garlic
1 tsp dried oregano or an Italian herb mix
1 T capers
juice of 1 lemon
fresh basil to garnish
