Kale Hemp Tabbouleh

A twist on traditional tabbouleh, using raw massaged kale greens and hemp seeds. Full of healthy fiber, fat, and plant based proteins!
Ingredients
5 cups organic kale, chopped (you may use Lacinto or regular kale)
2 large tomatoes, diced (about 1 cup total, you can use cherry tomatoes, roma, etc.)
2 cups cucumber, diced
1 cup parsley, chopped
1 cup mint, chopped
1 cup scallions, minced
½ red onion, diced
½ cup of hemp seeds
¼ cup olive oil
2 cloves of garlic, minced
¼ cup of fresh lemon juice (about 2 lemons)
1 Tbs. of lemon zest
1 tsp. sea salt
1 tsp. black pepper, ground (to taste)
