This recipe is not Japanese at all – but I got inspired from their bentos and portions of nutrients: carrots for the veggies, quinoa and bulgur for the carbs and a fried egg for the proteins. Beware of more than one egg per day! I love making big portions and keep the leftovers in plastic boxes in my fridge – quinoa can last for 3 to 4 days and cooked carrots for 3 days. The carrots are melting – it is so yummy! Cumin is so good for you as it is an excellent source of iron.
Ingredients
5 organic carrots
1 medium onion
3 spoons of cumin powder
1 glass of quinoa and bulgur
1 spoon of herbs
