Apple Crumb Cakes

Moist, fluffy little apple crumb cakes for a perfect day of fall baking.

Cakes:
1 1/2 cups light spelt flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/3 cup unsweetened applesauce
1/2 cup pure maple syrup
2 tablespoons refined coconut oil
1 cup of apple, small dice (about 1 medium Gala apple)

Crumb:
1/3 cup light spelt flour
a good pinch of salt
1 tablespoon coconut sugar
1 tablespoon refined coconut oil
