Autumn Quinoa Salad: Warm and hearty, this crunchy superfood salad is an ideal comfort food for cool autumn evenings.
Ingredients
FOR THE DRESSING:
2 tbsp apple cider vinegar
2 tbsp tamari or coconut aminos
2 tbsp maple syrup
2 tbsp orange juice
1 tbsp sesame oil
1/3 cup olive oil
FOR THE SALAD & SKILLET:
8 cups kale, de-stemmed and chopped
1 1/2 cups cooked quinoa
2 tablespoons coconut oil
2 cups Brussels sprouts, sliced
2 cups butternut squash, peeled and cubed
2 cups bella mushrooms, halved
1 shallot, finely chopped
1/4 cup toasted pumpkin seeds (spiced or cinnamon seeds are also delicious!)
