Classical combination of some roasted beetroot and goat cheese in a wonderful salad with pine nuts and olives
Ingredients
2-3 small beetroots
4 big handful of green leaves of your choice
50g goat cheese
15 black olives
1 big handful of pine nuts
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp rosemary
1 tsp thyme
salt, pepper
For the dressing:
2 tbsp olive oil
1 lime
1 tsp honey
1 tsp dijon mustard
